16 degrees is a lot; I wonder if the thermal compound was applied correctly and the sink was correctly seated in the first test.

Yeah. Consider the weight of the sink and the force pulling it towards the board - it can easily cause a crack.
But that's why you don't do this unless you know what you're doing...

I wonder: would it be possible - and would it make sense - to attach the heat sink directly (removing the IHS from the equation as a whole)?

I already ordered it, so it does not really matter.

It's going to be on 24/7 for years, so I guess it will pay back its price sooner or later.
I guess the smaller models are cheaper - but I like to be in the safe zone.

It is only -0.10 volts max undervolt for CPU, but at least it is something. They also added more RAM voltages. I wonder if a BIOS hack would allow less.
