I ask because I'd only choose the FT02 over the 810 if it was a lot quieter, but I've heard a lot of people say the FT02 isn't that quiet, which makes me lean towards the 810.

The FT02 but you will need to reduce the fan speed alot. Alternatively you could change the fans.
