560ti is a much better card.

Go with the GTX 560 Ti. It's actually designed for heavy lifting (hence the GTX), whereas the GT 630 is not. In fact, the GT 630 is nothing but a rebranded GT 440, whereas the 560 Ti was a replacement for the GTX 460/470 (depending on how you want to see the performance and labeling).

PS. Consider a Radeon HD 7850 as an alternative. They're not terribly expensive, but run much cooler than the 560 Ti cards and have some performance advantages.

Obviously gtx560ti is much faster, though the question imho doesn't make much sense. If you just need something to hook up a display with no need for gaming a gt640 is more than sufficient, much cheaper and it will use less power (just don't waste money on 2GB or 4GB cards).
Though even if you'd want something which is quite capable for gaming I wouldn't recommend a gtx560ti at this point. As Das_Saunamies pointed out HD 7850 are decent, or if you want to stick to nvidia I'd rather suggest a gtx 660, it is faster, uses less power, and the price difference is marginal to nonexistent (if you compare 1GB gtx 560 ti against 2GB gtx 660 - if both have 2GB the gtx 660 even wins this category easily too).
