Memory - Whats more important, Latency vs Mhz ?

So, I am looking at putting an i5 750 with a Gigabyte GA-P55-UD3. This mobo supports the follwing memory speeds:

DDR3 - 1066
DDR3 - 1333
DDR3 - 2200
DDR3 - 800

I am having trouble getting my head around speed (Mhz) versus latency. Is it better to have faster memory, or lower latency (or both if money was no object!) should I aim to be getting the fastest memory that the board supports. Is memory with heatsinks attached purely for those wanting to overclock?
comparing 1333 to 1066 Mhz, the former is rated at a higher voltage. Do these settign need setting manually, or does the MB detect memory ytpe automatically (so long as its supported ?)

so the gist of that as I got it is that it doesnt really make much difference. Cheap & cheerful it is then ! :)

It depends on your processor as to what kind of memory would benefit you the most. Like if you have a netburst architecture P4, they favor higher mhz was more then tight timings, but an athlon xp/athlon 64 is going to get better mileage from tight timings over slightly higher frequency.

as a relative noob i dont think its gonna make enough of a difference for me to spend enough time to understand what all of that means ! :)
