Smilingcrow brought the topic to our attention. Now german magazine C't 19/06 page 160 provides some more data.

945P:
Asrock Conroe-Xfire-eSATA2

975X:
MSI 975X Platinum PowerUp Edition

P965:
Asus P5B Deluxe/Wifi-AP
Elitegroup ECS-P965T-A
Gigabyte 965P-DS4
MSI P965 Neo-F

Power consumption off / idle / CPU full load:
Asrock 2 / 78 / 113 W
MSI 975X 3 / 85 / 123 W
Asus 7 / 97 / 135 W
Elitegroup 3 / 84 / 124 W
Gigabyte 4 / 92 / 133 W
MSI P965 3 / 101 / 148 W

Every board had an EIST option in the BIOS. Memory remapping didn't work.

Fan control:
Asrock: available, no documentation
MSI 975X: available, no custom settings
Asus: availalbe, not further explained by author
Elitegroup: fine tuning possible, Core temperature under environment
Gigabyte: 3 or 4-pin fans with voltage or PWM control, minimum fan speed very low compared to competitors
MSI P965: available, but sharp changes in speed

Vcore in BIOS:
MSI 975X: 1.2 - 1.6 V
Asus: 1.1 - 1.7 V
Gigabyte 0.7 - 2.4 V
