Need something that will give me power comparable to a PSU

I'm in the process of experimenting with resistors, diodes and such to undervolt my fans - but right now my only option is to test stuff with a powered-on computer system, potentially putting its components at risk.

I've also tried just using an AC adapter that gives DC 12V, but I'm not sure a PSU will behave in the same way as that.

What should I get that will allow me to use a PSU safely without haveing a motherboard on it?

Something like this maybe? :

If you have a spare PSU, just use a wire (paperclip, for example) to connect the green and one of the black wires on the ATX plug, which will make it start.

Some PSUs might not like running without load, so you might want to hook up an old hard drive or two just to be safe.

Another possibility is to find an old AT power supply. They turn on/off using a simple physical switch. You'll find them in old Pentium computers and older.
