After testing the temps thoroughly, I have managed to get the speeds honed in:

Idle:
220mm fan - ~150RPM (25%)
GPU fan - ??RPM (0%)

Load:
220mm fan - ~210RPM (35%)
GPU fan - ??RPM (30%)

The CPU settles in at between 60-65c under Prime95, and this rises to 68c with Furmark burning the GPU also at 68c, safe to say that I am very happy with how quiet the system is now. The temperatures can only get better as I add proper ventilation to the case.
