I have a case that can only take 60mm fans. I've tried the Vantec Stealth, and it is still a bit loud for my tastes. Does anyone know of a good quiet 60mm fan?

60mm is on the low side of the size range for really quiet fans. At that size they tend to be whiny. But both Papst and Panaflo make 60mm quiet fans. They're a bit harder to find, but they're out there.

What about using a 60 to 80mm adapter? If it'd work you'd be able to get both less noise and more airflow from an 80mm.

Or, have you tried running the Vantec at 5 or 7 volts?

maybe u could mod the case a little bit with like a nibbling tool or a dremel or something like a angel grinder. Most of the cases I've seen with just 60MM mounts for case fans have enuff space in the case for a 80MM fan in it but they only punch out 60MM fan mounts :( the fan adapter is a good idea as well but I think u'll still have to probably cut out the punch holes for the 60MM fan mounts and put it in the back of the case outside. good luck :)
