I noticed that Panaflos don't have the 3rd yellow wire that some other fans have. Can anyone please explain to me what the difference between two and three wires is?

The third wire is for RPM monitoring, with the panaflows the standard 80MM L1As and most panaflows don't have RPM sensing, some panaflows do have them and they are marked by a S variant.
The RPM wire is usually the wire that isn't coloured red or black, it gives out a pulse every revolution it makes so that the motherboard or something like the digidoc can read it.
