To have a quiet GTX 580 you have to go after market cooling with your own choice of quiet fans. I'd recommend Thermalright Shaman (got one on my GTX580) but it seems to be sold out almost all over the world. Got the thermalright silver arrow on a 2500k @4600 Mhz.
Only time those fans went to full spin was in the middle of the Japanese summer heat wave. And I was running the heat stress test on Prime95 just for kicks.

I presume you have a windows 64bit(needed for the amount of RAM you have) and that you have the current driver for that version of windows and not a 32bit gfx card driver version.
