By the way, after I bought this new board, I checked, and the Celeron e3200 isn't listed on it's list of supported CPUs. Just about every other Socket 775 CPU is, but not that one. Do you think it's worth trying even if it's not on their list? I've emailed Gigabyte to check, hoping I won't get back...

I don't see processing power as a concern for you. With that in mind any one of the dual core celeron e1x00 or Pentium e2x00 would work well. While the Celeron 430 will use less power it does not support speed stepping and will not throttle down under load. With that in mind, I think the e5x00 would be a better choice. I really appreciate your reusing the case from an old machine. I have system at my office that reuses a plain vanilla mATX that I recovered shortly being trashed. I saved a considerable amount of money by reusing the case and carefully picking cool and quiet components. Thanks for sharing the picks!
