6 meters are not so much: you could build a USB cable by yourself, by using a ethernet cable (FTP Mediatwist by Belden would be the top), minimum 24AWG (stay away from 26AWG patch cords).
I think 30MB/s should be easily attainable.

Why RAID1 and not RAID5? RAID5 requires at least 3 drives. You spent $500 for 2*1TB drives; with RAID5 this would have been cut in half: $250 for 3*500GB drives. RAID5 has also a reading speed advantage (useful for a fileserver). WD's 1TB HDs use 4*250GB platters, while 500GB ones 2*250GB. So RAID1...

I would be interested to see if there was a difference in power consumption in the new X48 Motherboard and the old P35 motherboards with the bios / utility update. In the article it mentions that the X48 has 12 phases and the P35 only has 6 phases. I wonder how this compares? X48 is an overclocked ...
