I'm pretty sure the Shuriken Rev B will be much to tall for that case (which is a beautiful case, mind you!). My suggestion would be the Scythe Kozuti - 40mm tall for plenty of breathing room, and cools the 2500K in my HTPC adequately under 4x Prime95 + Furmark, and that's a 95W CPU. I strongly doub...

What will be using the PC for? As long as you aren't gaming there is value in the onboard GPU on Sandy Bridge processors as that should be enough graphics power. And it means no discrete graphics card which means less heat and (perhaps) one less fan assuming that you were considering a graphcs card...

The temperatures are definitely higher than they should be - I have temps in the upper 60s under load with a very small Scythe Kozuti on a 2500K. Yours should be much lower with that Noctua.

The Big Shuriken 2 has an extra heatpipe and, more importantly, a backplate mounting system instead of pushpins. I wouldn't expect temperatures to be much better, but the backplate will make installation much more secure.

Oh yes, I remember looking at the Samuel too, but felt safer, memory heatspreader-wise, going with the Kozuti. The Samuel seems to suffer a bit, in my eyes, by not being as compact as the Kozuti, and when I'm not concerned about component interference, the Big Shuriken works better. That would work ...

Given that my 2500K is cooled quite adequately by a Kozuti, which has a smaller surface area and the airflow of an 80x80x10 fan, that should absolutely work. I don't know about overclocking, mind you, but at stock I would do that without worry.

to tear it apart again. Took about that long when I tried getting an Antex 620 water cooler in (doesn't fit BTW...it'd have to be mounted externally)-: I had to abort and install the stock cooler instead. The Scythe SCKZT-1000 Kozuti looks similar to the Big Shuriken, which means it'll hit the memo...

It's possible that you might run across a game that will benefit from the 8MB of cache on the i7-2600(K) over the 6MB i5-2500(K), it's less likely that you'll come across one that will make use of the 2600's hyper threading. I'd say, save $100 and go for the i5-2500(K). Your other apps certainly do...
