You mentioned the temps, but the how is the noise (or lack thereof), because:
Lian-li fans at those speeds? Do you always watch movies with headphones on
You even hard-mounted them! How could youHard Drives: Samsung Spinpoint 200 & 250 Gb (7200 rpm)
Fans: 3x Lian-li: 2x 140mm (900 rpm), 1x120mm (1200 rpm)

Well the one at the rear is controlled by the Fan controller and is undervolted with a ULNA cable its speed should be around 500 rpm since i always run it at 40% speed which is the minimum. The one in front of the hdd's is undervolted with a Lna cable too and controlled by the mobo : speed 700 rpm all the time. The 3rd one never works but it makes a bit of noise i need to buy another lna cable.
The Noctua run at 551 rpm most of the time, can go up to 700 rpm (depending if i encode a video or not) , controlled by the mobo.
The Zalman and the GC fans are undervolted (Lna cable) and controlled by the fan controller at 40% speed most of the time.
Finally, the PSU fan works normally (no idea of its speed) but it's quiet... for sure.
Overall i don't complain it's a quiet setup but i suppose that if i change to water cooling that'll be even quieter. As i'm picky i guess i will have to consider that for my next pc.
Anyway as is i'm happy

You have quite a lot of cables in there, is it practically impossible to route cables behind the motherboard tray, maybe because of the foam on the side panel, or did you just not bother?
I have read some conflicting reports on whether the hard drive rack is removable or not, could you clarify this?

Yep there is foam on both panels (i have added a layer on each) so it's a bit difficult to have all the cables behind the mobo, not impossible i guess if i drill (especially for the atx 12v).
The Problem with routing the cables as neatly as possible is once it's done it's a nightmare to remove one.
The HDD cage seems removable, (i've seen pictures on the net where it's been removed) I will have to try to suspend the hdds, currently they're mounted on rubber gromets.
