Id like to connect a 12cm fan to the 5850 and have it be controlled by the card itself. Questions is: what kind of adapter cable would i need to use in order for the fan to fit into the card's fan connector?
Also, do I have to worry about the card outputting too much power? I believe the stock fan on the 5850 is 14 watts according to the SPCR, and most case fans run much lower.
What fans to use for connecting to the 5850?

...and you have the setup you're looking for. If the 120mm fan you intend to connect already has PWM-control, you can skip the nanoxia controller. If you don't (say you want to use a standard Nexus fan), then the nanoxia controller is needed. It converts PWM to voltage, and also makes it possible to tweak it (slightly). Maximum voltage is about 11.2V with this setup.
The stock fan is rated to 9.6W, so as long as you stay below that, you're fine. (which would be pretty much any fan that a SPCR patron would ever consider using :p )
