So, what's the verdict on 1080ti?

They make noise, too.

I think there are a couple more to be released yet and that will be it until Volta, but is it safe to say that the Asus one is the quietest one, as it appeared at the beginning?

I would wait for the MSI GTX1080Ti lightning, before comitting to any, the past GTX980Ti lightning was the quietest of all, i believe both Ti have similar TDPs, so im expecting similar behavior.... but you never know, until its out. If you cant wait, Asus seems like one of the best, but with this dont get your hopes up too much, all seem similar and none seems at the level of past high end gpus in term of quietness.

After reading the latest reviews the most quiet ones are:
  • Asus Strix
    MSI Gaming X
All that remains to see is the MSI Lightning Z.

There are others like EVGA KingPin and Galaxy HAF, there are other special versions that are released from time to time, but probably the lightning we might see reviews in a month or so.

Yes, but MSI, for the last few years, is known to have very efficient and quiet cooling solutions for their top GPUs.

Others not so much.

The GTX 1080 Ti requires 70 more watts of power than the 1080, making it unideal for silent builds.. It's overkill for video editing, 1080p gaming and even a lot of 1440p gaming. This card may be relevant for 10 years, but it's more cost and power efficient to just buy a mid-range card every years than go high range. The only utility I see for this card is for 4K gaming in a (probably) not-so silent PC.
