Been looking around and can't find a single 120mm quiet fan (or any noise level) with only a 3pin (tach sensing) power source.
Is there such an animal?

Sure is - all mine are.
I've got two Evercool Aluminium 120's (riding under the "TITAN" brand in Europe).
AccoustiFan 120's come in 2 and 3-pin configs. My XP-120 is cooled by a Tach-sensing 120 mm fan.
Easy peasy...

Papst has a 120mm fan with a 3-pin connecter too. Although the fan is not quiet at 12V it sure is at 5V

Globe 120mm fans. A very interesting fan that I've recently begun to "play" with. Best when used with a Zalman fan mate #1.
Inexpensive and quiet, too. Much more information can be found in searching for a review on 120 mm fans done by Ed Ng.

The 120mm Mechatronics fan at coolerguys is 3 pin and supposedly very very quiet.

The Enermax adjustable (UC-12FAB-B) has also a 3-pin connector. Though it needs 5V for quiet operation, at 12V it's LOUD. Even when the adjust is at min. Comes with 4-pin to 3-pin adapter, which is easily modded for 5V operation.

Panaflo L1A's can use regular 3-pin Panaflo tails as well.

Vantec Stealth (you did say any noise level
)
Noiseblocker SX2Pro Blacksilence (quietish with little bearing clicking that can be muffled with a good case)
Nexus is powered from a 4-pin but has a seperate tach-sensor 3-pin lead. You can't control the voltage through software though.

i'd just like to put another vote towards the globe 120mm fan; i havent heard of anyone or experienced having any problems with them versus papst/panaflo/evercool/acoustifan where i've had all of htem and have gotten bad models (though good ones as well).

none, but it lets you use a motherboard header instead of a regular 4 pin molex - don't need rpm monitoring for speedfan to work.

Why go to all that effort when there's no problem with attaching a 3pin female plug using only two wires.... I've done this with all my L1As, and attached them to the MoBo headers without a problem...

CompUSA is closing out their current house brand 120mm fan (3-pins) for $4.88. The brand is Power Logic.....fairly quiet at lowered voltages. Sometimes there's an Evercool plastic fan in the package. Never know....

how is using a "normal" 3 wire tail more effort than soldering/crimping/whatever the two bare wires onto a 3 pin female connector?
unless two wire tails with 3-pin connectors are common... i don't even know, but i only normally see a choice of 3-wire tails for mb/fanbus etc connectors, and 4-pin molex tails.
unless you took a 3 wire tail and just cut the third wire off!

ahh, I see your point... I've only ever purchased fans that have had bare tails or 3pin headers...
