Hi,
I'm planning on following
this guide to make a switch to put on the side of my desk to control the speed of my system fans.
The guide only shows how to do it with 1 fan.
Can i use the switch with 2 fans or would i need 2 switches?

Just wire the fans in parallel and you shouldn't have a problem. You can use one switch so long as it's rated for the current of two fans (which it almost certainly is)

I know what you mean by parallel but how would i wire that exactly?
When looking at this picture, would i just solder wires from both fans to the middle pins?

So it just draws twive as much power instead of dividing by 2.
I guess?

That is right, the voltage is the same, but the amperage (and wattage) doubles.
